Upcycling in the food ecosystem is a fascinating and timely topic and on the rise. According to a recent report from the U.S. Environmental Protection Agency (EPA), food upcycling is one of the three most environmentally friendly ways to mitigate food waste. Upcycling is taking food that would have otherwise ended up in landfills, anaerobic digesters or incinerators and giving them a second life to be consumed by humans in a nutritious and innovative way. This innovation is gaining momentum while it is becoming increasingly important as the world faces food waste challenges, which contributes to environmental problems like greenhouse gas emissions.
